My mom always made this as a gift around Christmas. People are always raving about it and super impressed with her candy making (fudge, caramel, and of course). I never knew how easy and quick it was until I requested the recipe to make for gifts myself. It’s quick to assemble but does take 8 hours to set up.
Fair warning- you will need to work quickly. I recommend having everything measured in advance so you can go through each step smoothly. I’ll try to write it that way too.
You will need:
1 cup butter
1 cup brown sugar
1 tsp baking soda
1 cup chocolate chips
1 cup chopped pecans
Approx 40 saltine crackers
Preheat oven to 350• f. Line a four sided cookie sheet with foil, spray well with pam. Lay saltines out on the sheet side by side without much space between each cracker.
Melt butter and brown sugar on med/hi on stovetop, stirring often. Bring to a boil for exactly one minute (no need for a candy thermometer). After one minute remove from heat and quickly stir in baking soda.
Promptly poor over crackers, spreading to corners if needed.
Bake for 10 minutes only. Cool for 2 minutes.
Pour chocolate chips over top. Allow to melt and lightly spread… Sort of in a smearing fashion (do not mix with bottom layer). It won’t cover every inch and that’s ok. Then sprinkle pecans over top and lightly press into chocolate with a fork so it can secure well into the candy.
Allow to set for 8 hours before breaking apart. Do not refrigerate.
